Wash and rinse Poha and transfer it in a colander to drain the water off properly.
Add sugar, salt, and half of coriander in Poha and mix gently. Keep aside.
In a broad pan, add oil and turn on the heat.
Add the peanuts once the oil is hot and fry them and transfer them in a plate.
In the same oil, add mustard seeds and cumin seeds. Once they splutter, add asafoetida green chillies and curry leaves.
Saute for a few seconds, then add onions and saute also add cucumber
Now add salt and turmeric and saute fir few seconds.
Further add Poha and peanuts, mix gently and properly. Also add lemon juice.
Let it simmer for 2-3 mins and then tur off the heat.
Garnish with coriander. Serve hot with some namkeen or sev.
NOTE: Use thick Poha only. You can mix turmeric in Poha.
