Nonia Bhaji/ Kulfa Saag

#LP26 Kulfa Saag, also known as ‘Noniya Bhaji’ or ‘Lonia’, is very beneficial for health as it is rich in Omega-3 fatty acids and vitamins.

Step 1

Add a little salt and water and pressure cook the chana dal for 1-2 whistles.

Step 2

Heat oil in a pan. Add cumin seeds, green chilies, garlic, ginger paste, and onions and fry until golden.

Step 3

Add chopped tomatoes and cook until softened.

Step 4

Add turmeric powder, coriander powder, and red chili powder and fry over low heat for 1 minute.

Step 5

Add chopped mixed vegetables and salt to taste, mix well. Cover and cook on low heat for 3-5 minutes, until the vegetables soften slightly.

Step 6

Add chopped noniya saag/kulfa saag and boiled chana dal (including the remaining water) to the pan. Mix well. Cover and cook on low heat until the greens and all the vegetables are cooked and well combined with the dal.

Step 7

Heat ghee in a pan. Add cumin seeds and whole chilies, lightly fry, and pour over the prepared kulfa saag.

Step 8

Serve hot with roti, paratha, or rice.
