Step 1

In a bowl, combine methi leaves, onion, green chilies, ginger, and spices. Mix in besan and rice flour. The moisture from methi and onion usually binds it—add very little water if needed.

Step 2

Take small portions and shape into small flat discs. Heat oil on medium flame. Fry vadas until golden brown and crispy.

Step 3

Remove onto paper towels and serve hot with chutney or tea.
