Prepare the Wrap Batter : Add besan, paneer, coriander leaves, ginger, green chilli, black pepper powder, pink salt, and water to a blender.
Blend until smooth to form a thick, lump-free batter. Adjust the consistency with water if required.
Cook the Wrap: Heat a non-stick pan and lightly grease it with oil.
Pour a ladleful of batter onto the pan and spread it evenly into a thin wrap.
Cook on medium heat until the underside is golden. Flip and cook the other side until fully done. Remove from the pan and keep aside.
Prepare the Filling: Heat 1 tsp oil in a pan. Add the sliced vegetables and paneer. Stir-fry for 3–4 minutes until the vegetables are slightly tender yet crisp.
Season with chilli flakes, oregano, black pepper powder, and salt. Toss well to combine.
Assemble the Wrap: Spread a layer of green chutney over the prepared wrap. Place the vegetable and paneer filling in the centre. Fold both sides over the filling and roll tightly to form a wrap.
