Dal Vada

#rain26 Dalvada, Gujarat’s famous street food and it is very popular especially in Ahmedabad. This popular Gujarati snack is more cosumed and enjoyed during monsoon with fried green chillies and freshly sliced onions with a cup of tea. It is like mandatory to have dalvada when it’s raining even if it means to we have to wait in long queues to get it. Though street vendor’s dalvadas are undoubtedly tempting and tasty, we also can make the same at home. These crispy from out side and spongy and soft from inside , fried and flavourful snacks are irresistible and addictive.

Step 1

Wash and soak dal with sufficient water for 4-5 hours atleast.

Step 2

Once it is soaked, rub the dal with fingers, so most of skin will come off. Almost 70% od skin should come off.

Step 3

Then drain out the water and all floating skins. Then grind it into coarse and thick batter. Add only 2-4 tbsp of water if required.

Step 4

Then add ginger chilli paste, asafoetida and salt. Stir the batter vigorously in one direction so it becomes light and fluffy. This is very important step.

Step 5

While stirring batter turn on the heat, and let the oil heat on medium flame.

Step 6

Then drop carefully vadas with hand in heated oil.

Step 7

Keep stirring vadas with slotted spoon so it properly fry from all the sides.

Step 8

Remove it on a tissue lined plate.

Step 9

Serve hot with fried green chillies, sliced onions and tea.

Step 10

Note:

You can add chillies and ginger while grinding dal.

Can add coriander and garlic too.
