Step 1

Prepare the Pakoras: Take besan in a bowl and add ajwain, salt, and a pinch of baking soda. Add water gradually and prepare a smooth, thick batter.

Step 2

Heat oil in a pan and drop small round portions of batter into it. Deep-fry until golden and crispy. Keep aside.

Step 3

Prepare the Kadhi: Heat oil in a deep kadai and add sliced onions. Sauté until they become soft and lightly golden.

Step 4

Add chopped tomatoes and cook until soft. Whisk the curd with besan, turmeric, red chilli powder, and a little water until smooth.

Step 5

Pour this mixture into the kadai and add the remaining water. Stir continuously at first and bring the kadhi to a boil.

Step 6

Allow it to simmer until the gravy is cooked and develops a delicious, smooth consistency.

Step 7

Add the Pakoras: Turn off the gas and add the prepared pakoras to the hot kadhi. Allow them to soak up the flavours.

Step 8

Prepare the Tadka: Heat oil or ghee in a small pan. Add cumin seeds, hing, dry red chillies, and curry leaves.

Step 9

Let them crackle and release their aroma. Pour the hot tadka over the kadhi.
