Golden crispy noodle nests topped with fresh crunchy vegetables in flavorful chopsuey sauce. A crowd-pleasing Indo-Chinese starter that looks fancy but is super easy to make.
To Make Crispy Noodle Nest*
Boil water in a large pot and add the noodles. Cook until soft.
Drain the noodles and immediately transfer them to cold water. Drain again.
Add corn flour, salt and 1 teaspoon oil to the noodles. Toss well so they don’t stick.
Heat little oil in a pan on medium heat. Using tongs, shape the noodles into round nests and place in the pan.
Shallow fry both sides until golden and crispy. Place on tissue paper to remove extra oil.
*To Make Chopsuey Gravy*
Heat 2 tablespoons oil in a wok on high flame.
Add ginger, coriander stems and green chili. Saute for 10 seconds.
Add cabbage, carrot and all bell peppers. Stir fry on high heat for 2 minutes. Keep the vegetables crunchy.
Add chili sauce, tomato ketchup, soy sauce, salt, black pepper and 1/2 cup water. Let it come to a boil.
Add the corn flour slurry to thicken the gravy. Turn off the gas.
*To Serve*
Place the crispy noodle nest on a serving plate. Pour the hot chopsuey vegetable in the center.
Garnish with spring onions and sesame seeds. Serve immediately for best crispiness.
*Important Tip*
Rinsing boiled noodles in cold water stops the cooking and keeps them from turning mushy. Pour gravy on the nest just before serving
