Step 1
Heat oil in a pan and add cumin seeds.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and green chillies. Cook for a minute.

Add tomatoes and cook until soft and the oil begins to separate.

Add turmeric, red chilli powder, coriander powder, chole masala, garam masala, amchur, and salt. Mix well.
Step 6
Add the boiled chickpeas and mix until they are well coated with the masala.
Step 7
Add water, cover, and simmer for 10–15 minutes so the flavours blend beautifully.
Step 8
Lightly mash a few chickpeas to make the gravy thicker.
Step 9
Garnish with fresh coriander and serve hot
