Step 1

Heat oil, add mustard seeds → let them crackle. Add curry leaves, green chillies, ginger, onions → sauté till soft. Add turmeric, salt, mashed potatoes → mix well.

Step 2

Add coriander, cook 2–3 mins → cool slightly. Make small round balls.

Step 3

Mix besan, turmeric, chilli powder, salt. Add water gradually → thick, smooth batter (coating consistency).

Step 4

Heat oil. Dip potato balls in batter → coat well. Deep fry till golden and crisp. Serve hot with green chutney or ketchup.
