How to Make Kaju Katli Premix in a Food Processor

Kaju katli is the sweet most people buy rather than make, mostly because of the sugar syrup and the fear of getting it wrong. A premix takes some of that fear away. Grind the cashews with sugar and milk powder ahead of time, store the powder in a jar, and when Diwali or a guest turns up, a few minutes at the stove turns it into katli. It takes about 15 minutes to make the premix.

Ask anyone who has tried kaju katli at home, and they will tell you about the syrup. Too thin and the katli stays sticky; too thick and it turns hard, and the window between the two is small. A premix keeps all of that out of the way. The cashews are ground fine with sugar and a little milk powder, and the dry powder sits in the jar until it is needed.

A food processor is the best tool for this. Cashews are oily, and a mixer jar tends to heat them and turn them into a paste. In a food processor, use the pulse button and grind for a few seconds at a time. Stop and shake the bowl. Stop again, scrape the sides, and carry on. The powder should feel fine and dry, like flour. If it starts to clump or feels damp, the cashews have begun to release oil, and the best move is to stop right there.

Sugar goes in with the cashews, so the powder is sweet and ready. Milk powder is optional, though it makes the katli softer and holds the shape better. A pinch of cardamom is the usual flavour, and a few

Tips and Tricks

  1. A food processor with a sharp blade gives a finer powder than a mixer jar, and the pulse setting helps keep the cashews from turning oily.
  2. A nonstick pan is the easiest pan for cooking the dough, as it keeps the mixture from catching at the bottom.
  3. A knife with a thin, sharp blade cuts the rolled katli into clean diamonds.
  4. A fine steel sieve takes out the coarse bits and gives the premix a smooth, even texture.
Step 1

Spread the cashews on a plate and let them sit for 10 minutes so they are completely dry.

Step 2

Put half the cashews in the food processor bowl.

Step 3

Pulse for 3-4 seconds at a time, stopping to shake the bowl and scrape the sides. Repeat until you have a fine powder.

Step 4

Sift the powder into a bowl. Grind any coarse bits again and sift. Do the same with the remaining cashews.

Step 5

Add the powdered sugar, milk powder and cardamom to the cashew powder. Mix well.

Step 6

Sift the whole mixture once more for an even texture.

Step 7

Store in a clean, dry, airtight jar.

Step 8

To make katli, put the premix in a nonstick pan with the water and ghee. Stir on low heat for 5-6 minutes until the dough leaves the sides.

Step 9

Turn it out onto a greased sheet of parchment. Let it cool for a minute.

Step 10

Place another sheet of parchment on top and roll to about 4 mm thick.

Step 11

Cut into diamonds, press varq on top if using, and let them set for 20 minutes.

Frequently Asked Questions
