Step 1

Prepare the Bhalla Batter: Soak the urad dal for 4–6 hours. Drain and grind it into a thick, smooth batter using as little water as possible. Whisk well until light and fluffy.

Step 2

Prepare the Dry Fruits Stuffing: Combine the chopped almonds, cashews, pistachios, raisins, and walnuts in a bowl. Mix well to create a rich, crunchy, and flavourful stuffing.

Step 3

Take a small portion of batter, flatten it gently, and place a little dry fruits stuffing in the centre. Cover with more batter and seal carefully. Deep-fry in medium-hot oil until golden and cooked through.

Step 4

Transfer the fried bhallas into warm water for 15–20 minutes. Gently squeeze out the excess water without breaking them.

Step 5

Whisk the fresh curd until smooth. In a separate bowl, prepare the sweetened yogurt by mixing curd with sugar. Keep both the khatti (tangy) and meethi (sweet) yogurt ready.

Step 6

Arrange the softened bhallas on a serving plate. Pour the tangy and sweet yogurt over them, creating a delicious balance of flavours.

Step 7

Sprinkle roasted cumin powder, Kashmiri red chilli powder, and chaat masala generously over the yogurt. The colourful spices enhance the appearance and add a wonderful combination of smoky, tangy, and mildly spicy flavours.
