Take a plate add Brinjal slice , add salt n keep aside..
Now take a bowl pour coriander paste, chilly powder, salt n oil/ghee marinated for10 mins..
Now place one Brinjal slice add1 piece of marinated cottage cheese n roll it, make all n keep aside..
Now take a pan add ghee n shallow fry the Brinjal for 5mins, cover the lid..keep aside..
Now take a kadai. Heat oil/ghee, pour Pumpkin puree, turmeric powder, onion paste, ginger garlic paste, chilly powder, salt, roasted cumin powder, cook until oil separate from pan ..
Now add almonds paste n sugar, cook for 2 mins ..
Now add milk n Kasturi Methi powder n cook until semi thick Gravy..
Now u can add the Brinjal roll in Gravy or u can serve on top of the Gravy..
Garnish with coriander leaves n sliced chilly..
