In a medium bowl, whisk eggs, milk, a large pinch of salt, and a few grinds of black pepper until well combined.
Pour egg mixture into a well greased non stick pan. Top half of egg mixture with spinach & tomatoes . Cook until eggs are just set, it will take around 6 to 8 minutes.
Top vegetables with grated cheese. Using a spatula, fold egg over filling. Slide omelet out of pan onto a plate.
Sprinkle oregano from top. Serve hot.
