#MD26 My mother is my greatest inspiration. A mother’s love is a bond that cannot be broken. She is the heart of my family, always with me. Mom, thank you for everything. I love you. My mother is the one who has always believed in me, even when I didn’t believe in myself. She is my constant support and source of strength, guiding me through life’s challenges. A mother’s love is unconditional, a gift truly priceless. From her gentle hands and loving heart, I learned the true meaning of compassion… Today I made Nadru lollipop kofta curry. It is known by various names like Lotus stem, nadru, Kamal Gatta, Bhashen, etc. It is very beneficial. It is surprising that even today many people are unaware of it. Lotus cucumber contains potassium, iron, phosphorus, vitamin C, protein, and fiber. It is also very helpful in weight loss. I have prepared this vegetable in a different way. While it looks exactly like non-veg, I have prepared it using catch masala. Adding catch masala has doubled its taste.

Step 1

First, peel the nadru and chop it into small pieces. Leave a large stem for the kofta. Wash it thoroughly with water; it contains a lot of dirt.

Step 2

Now, put it in a pressure cooker and bring it to a boil. Add the large stem that you left behind. Cook on low heat for four to five whistles. Transfer it to a strainer.

Step 3

Coarsely grind it on pulse mode. Add garlic, ginger, and green chilies. Transfer it to a bowl.

Step 4

Now add onion, coriander leaves, chili flakes, cumin seeds, salt, turmeric, chaat masala, asafoetida, gram flour, and oil and mix. Now cut the large stick we had boiled into long pieces to place in the koftas.

Step 5

Now attach it to the stick and shape it into a lollipop. Prepare all the lollipops in the same manner (as per the photo).

Step 6

Now put oil in a pan and fry them.

Step 7

Now to make the gravy, grind the onion, ginger, garlic, and green chilies finely.

Step 8

Pour oil in a pan. When the oil is hot, add cumin seeds, cardamom, cinnamon, mace, and Kashmiri red chili, onion, and garlic paste and keep stirring. Now grind the tomatoes.

Step 9

When the onion turns red, add turmeric powder, coriander powder, salt and tomatoes and fry well till the oil separates. Now add 1 tsp butter and curd and cook while stirring. Add water as required and cover and cook. Now add garam masala to it. Cook covered for 3-4 minutes so that the flavour of garam masala gets absorbed well in the vegetable. Now add finely chopped coriander leaves to it. Turn off the gas.

Step 10

Now our Nadu lollipop Kofta curry is ready.

Step 11

Now first place the lollipop in a bowl, pour kofta curry on top of it, pour butter on top of it and serve with hot chapati and salad.
