Shape the spiced potato mixture into small, flat rounds that match the diameter of your idlis. Pan-fry them until crisp on both sides.

Spread a little ketchup or chutney on the bottom idli half.
Step 4
Place a fresh tomato slice, followed by the warm veggie patty.
Step 5
Top with another slice of cucumber or onion.
Step 6
Place the top idli half on and secure the whole “burger” with a toothpick through the center.
Step 7
Sprinkle with a bit of fresh coriander or chaat masala.
Step 8
Plate with fresh salad rounds and crisp snacks.
