#BP26 This Idli Burger is a fantastic example of fusion finger food—taking the soft, wholesome base of a traditional South Indian idli and reinventing it as a trendy, bite-sized slider. It’s an excellent way to use leftover idlis or to give a healthy twist to typical fast food.

Step 1

Carefully slice each idli horizontally into two equal halves. Lightly toast the flat sides on a tawa with a little butter until they are golden and slightly crisp.

Step 2

Shape the spiced potato mixture into small, flat rounds that match the diameter of your idlis. Pan-fry them until crisp on both sides.

Step 3

Spread a little ketchup or chutney on the bottom idli half.

Step 4

Place a fresh tomato slice, followed by the warm veggie patty.

Step 5

Top with another slice of cucumber or onion.

Step 6

Place the top idli half on and secure the whole “burger” with a toothpick through the center.

Step 7

Sprinkle with a bit of fresh coriander or chaat masala.

Step 8

Plate with fresh salad rounds and crisp snacks.
