Curd Quinoa

Step 1

First of all, Pressure cook 1½ cup of rinsed quinoa with 1 cup of water for two whistles on medium-low heat. Let the pressure release naturally

Step 2

Slightly mash the cooked quinoa with a spoon. Next, add the whisked curd (yogurt), milk, and salt, and mix everything well. Keep it aside.

Step 3

For Tempering: Heat oil in a pan until it’s hot, then add the mustard seeds and let them splutter.

Step 4

Next, add urad dal and cashew nuts, and fry them until they turn light golden brown.Add the grated ginger, curry leaves, green chilies, and asafoetida.

Step 5

Saute for a few seconds.

Step 6

Pour the tempering over curd quinoa rice and mix until well combined.

Step 7

Lastly, garnish with grated carrot, pomegranate seeds and fresh coriander. Serve chilled and enjoy
