Dry roast sesame seeds until aromatic, then grind into a coarse paste or powder. Keep aside.
Marinate the chicken
Mix chicken with turmeric, salt, and a little mustard oil. Rest for 20 minutes.
Heat mustard oil
Let it smoke slightly, then reduce flame.
Cook the base
Add chopped onions and sauté till golden.
Add ginger-garlic paste and cook well.
Add spices & chicken
Add chili powder, coriander, cumin, and green chilies.
Add the marinated chicken and mix well.
Slow cook (Bhuna style)
Cook on low-medium flame, stirring occasionally.
Let the chicken release its own juices and cook without adding much water.
Add sesame magic
Once chicken is nearly done, add the ground sesame (til).
Mix well and cook till oil separates and the dish turns slightly dry and rich.
Garnish with fresh coriander leaves and cook till perfectly roasted.
Serve with hot puri or chapati
