Step 1

Heat oil or ghee in a pan.

Step 2

Add mustard seeds and cumin seeds. Let them crackle.

Step 3

Add green chili and onion. Sauté until the onion becomes translucent.

Step 4

Add carrot, peas, and capsicum. Cook for 2–3 minutes.

Step 5

Add turmeric powder and salt. Mix well.

Step 6

Add roasted vermicelli and sauté for 1 minute.

Step 7

Pour in 2 cups of water and bring it to a boil.

Step 8

Cover and cook on low heat for 5–7 minutes, or until the vermicelli absorbs all the water.

Step 9

Switch off the heat and let it rest for 2 minutes.

Step 10

Add lemon juice and garnish with fresh coriander leaves.
