Tricolor Masala Dosa Chutney

#AUG26 I like to dedicate my nation India Tricolor Masala, tricolor Dosa, and tricolor chutney on the Independence Day.

Step 1

Soak rice and dal for 4 hours. Wash poha and add when grinding dal and rice to make Dosa batter. Keep aside for fermentation.

Step 2

Boil and mashed potatoes. In a Kadai add oil, urad dal, rai, curry leaves, and chilies. Now saute cut onion till transculant. Now add mashed potatoes, add salt. Mix it well. Plain white masala sabzi is ready.

Step 3

Now transfer in a bowl. Make 3 portions of masala sabzi. In the same Kadai, pour tomato puree, add red chili powder, and turmeric powder, saute for 2 minutes, and add 1 portion of ready white sabzi. Mix well. Saffron colour masala sabzi is ready. Transfer in a bowl.

Step 4

Now in the same Kadai, put a white colour sabzi. Now add green chutney, combine well, till turns green colour. Now green colour masala sabzi is ready.

Step 5

Add salt to the Dosa batter, and add water if required. Make 3 portions of batter. Keep 1 plain white. Add saffron colour in 2nd portion and green colour in 3rd portion. Mix well, and check the perfect colour comes out.

Step 6

Heat a Dosa tawa. On a slow flame of gas, pour saffron batter or green batter, in the middle of tawa, and spread in a circle. Now spread the plain white batter, next to saffron or green batter. Spread evenly in a circle. Now pour green or saffron batter next to a white circle and spread it evenly. Apply oil as required. Check, whether the tricolor Dosa is cooked crispy.

Step 7

Make all Dosa in the same way, you can change the inner and outer layers of colours – saffron or green. But white must be in middle.

Step 8

Our tricolor Dosa is ready with 3 colors of masala sabzi and 3 colors of chutneys. Serve tricolor masala Dosa with tricolor chutneys.
