Sweet Potato Paratha

Step 1

Knead soft dough, softer than roti dough. Rest 15 min covered.

Step 2

Divide dough and stuffing into 6 balls each.

Step 3

Roll dough ball to 4 inches, place stuffing in center, seal edges up and pinch off excess.

Step 4

Gently flatten, dust with atta, and roll to 6-7 inches. Go slow – sweet potato filling is soft.

Step 5

Heat tawa on medium. Cook paratha 30 sec on side 1 till you see bubbles.

Step 6

Flip, smear ghee on top, flip again, smear ghee on other side. Press edges lightly.side

Step 7

Cook till golden spots appear on both sides.
