Rajasthani Gatte Sabji

#LP26 This traditional Rajasthani dish is light, tangy and full of flavors, made with soft besan gatte cooked in a spiced buttermilk gravy, it is perfect for everyday meals and tastes best with roti or steamed rice.

Step 1

In a bowl add besan, curd, haldi, red chilli powder, salt, ajwain and oil, mix well and knead into a semi-soft dough using little water,

Step 2

Make long cylindrical rolls from the dough and boil them in water for 8–10 minutes, once cooked

Step 3

Take them out and cut into small gatte pieces, now heat oil in a pan add jeera and hing,

Step 4

Then add all dry spices and sauté for a few seconds, add the boiled gatte and mix well, pour thin chach slowly

Step 5

While stirring, cook on low flame for 8–10 minutes till gravy becomes slightly thick and flavorful, serve hot.
