Step 1

Heat oil in a pan. Add dabeli masala, chili powder, chutney, and water. Mix in mashed potatoes and salt. Cook for 2–3 minutes until the mixture comes together.

Step 2

Slice pav buns horizontally. Spread garlic chutney on one side and tamarind chutney on the other. Stuff with the potato mixture.

Step 3

Add onions, peanuts, pomegranate seeds, and sev. Close the pav and toast with a little butter until lightly crisp. Serve hot.
