Chawal ko 20 min bhigo do. Phir paani nikal do. Bhari tale wale bartan mein 3 cup paani, namak aur ghee daal ke ubalo.
Chawal daalo, ek ubaal aane do. Phir dhak ke medium-low flame par 12-15 min pakao. Gas band karke 5 min dhak ke rakho. Fork se fluff karo.
Ek bowl mein besan, pyaaz, hari mirch, adrak, ajwain, masale aur namak mix karo. Thoda-thoda paani daal ke thick batter banao. 10 min rest do.
Kadhai mein oil garam karo. Medium flame par chote-chote pakode talo. Golden hone tak talo aur nikal lo.
Bade bartan mein besan aur 1 cup paani daal ke lump-free ghol banao. Isme dahi, haldi, lal mirch, namak aur baaki 3 cup paani daalo. Whisk karke ekdum smooth kar lo.
High flame par lagatar chalate hue ek ubaal lao. Hing daal do.
Note: Chalana zaroori hai warna kadhi phat jayegi.
Ubaal aane ke baad flame low kar do. 25-30 min tak dhak ke sim par pakao. Beech-beech mein chalao. Kadhi thick ho jayegi.
Kadhi mein tale hue pakode daal do. 5-7 min aur pakao taaki pakode soft ho jayein.
Choti pan mein ghee garam karo. Rai, jeera, methi dana daalo. Chatkne do.
Sukhi lal mirch, curry patta daalo. 10 sec baad gas band karke lal mirch powder daalo.
Ye tadka turant kadhi ke upar daal do. Dhak do taaki aroma andar rahe.
