Step 1
Heat butter in a heavy-bottom pan.
Step 2
Add garlic and sauté until fragrant.

Add onions and cook until soft and translucent.

Add carrot & bell peppers and stir fry for a couple of minutes, followed by celery and sweet corn and cook for 2 minutes more .

Pour in water, salt & freshly crushed black pepper.

Cover and simmer for 10 minutes. Then turn off the heat.
Step 7
Cool & Blend until smooth. Pour the blended soup back into the pot.This creates the signature thick and creamy chowder consistency.
Step 8
Pour in milk and fresh cream.Cook on low flame for 3–4 minutes.
Step 9
Do not boil vigorously after adding milk.Taste and adjust seasoning.
Step 10
Ladle into serving bowls.
Step 11
Sprinkle freshly crushed black pepper & some celery.
Step 12
Serve hot with garlic bread, toasted bread, or dinner rolls
