Cheese Corn Sandwich

Step 1

Prepare the Filling: In a mixing bowl, combine the boiled sweet corn, grated cheese, chopped onions, and chopped capsicum.

Step 2

Add salt, black pepper, oregano and chili flakes . Mix everything thoroughly until the ingredients are evenly distributed.

Step 3

Prep the Bread: Lay out the bread slices. Spread a thin, even layer of softened butter on the inside of each slice.

Step 4

If you enjoy an extra kick of flavor, spread a thin layer of green chutney over the butter on one or both slices.

Step 5

Assemble the Sandwich: Generously spoon the corn and cheese filling onto two of the bread slices, spreading it out evenly to the edges.

Step 6

Place the remaining two bread slices on top, butter-side down, to close the sandwiches.

Step 7

Grill to Perfection: Heat a grill pan, or sandwich maker over medium heat. Spread a little butter on the outer top slice of the assembled sandwich.

Step 8

Place the sandwich butter-side down onto the hot pan. Carefully spread butter on the upward-facing slice. Grill for 2-3 minutes on each side, pressing down lightly with a spatula, until the bread turns a crispy, golden brown and the cheese inside has completely melted.

Step 9

Slice and Serve: Remove the sandwiches from the pan and let them rest for a minute so the cheese settles. Cut and serve with green chutney.
