Baingan Bharta

Step 1

Roast the baingan directly on flame till soft and charred, peel the skin and mash it well

Step 2

Heat oil in a pan, add cumin seeds and a pinch of hing, then add chopped garlic and sauté, add chopped onions and cook till light golden,

Step 3

Add green chillies and tomatoes and cook till soft, mix in turmeric, red chilli powder, coriander powder and salt,

Step 4

Then add the mashed baingan and mix well, cook on low flame for a few minutes till everything blends nicely and flavors combine, sprinkle garam masala and mix well,

Step 5

Cook for another minute and turn off the flame.
