“Smoky Ool Chokha – A Traditional Desi Delight” is a simple and traditional Indian side dish made with boiled elephant foot yam and smoky roasted tomato, garlic and green chillies. Step 1

Peel the ool and wash it thoroughly with water. Cut it into small pieces.

Step 2

Boil the chopped ool until completely tender.

Step 3

Meanwhile, make a slit in the tomato and place the garlic cloves inside it.

Step 4

Roast the tomato with garlic and green chillies directly over the flame until nicely cooked and slightly charred.

Step 5

Drain the water from the boiled ool and mash it well.

Step 6

Peel the roasted tomato and mash it together with the roasted garlic and green chillies.

Step 7

Add the mashed tomato mixture to the mashed ool.

Step 8

Add mustard oil and salt according to taste.

Step 9

Mix everything thoroughly until well combined.

Step 10

Serve fresh as a traditional side dish.
