Kutchi Khari Bhaat – Vagharela Bhaat

#PC26 Kutchi Khari Bhaat is a highly popular spiced, savory rice dish from the Kutch region of Gujarat – India. Traditionally made with ghee, whole garam masala, onions, potatoes, and tomato offering a fragrant, slow-cooked taste. It is a simple yet celebrated staple, often served with curd or raita, and acts as a common staple in both daily meals and festive occasions. It can be prepared in wok. But I like to prepare it in the pressure cooker, which is time saver and makes it fast.  My family likes to enjoy Khari Bhaat with Dahi, Papad, and a glass of chaas (buttermilk)

Step 1

Wash and soak basmati rice in water for 30 minutes.

Step 2

In a pressure cooker, add ghee, hing, jeera, curry leaves, bay leaf, green chilli, cloves, and cinnamon for tempering.

Step 3

Add chopped onion, tomatoes, and diced potatoes. Sauté for a while. Add salt, turmeric powder, Kashmiri red chilli powder, coriander jeera powder, and garam masala. Sauté for a minute.

Step 4

Now add soaked basmati rice mix well. Add water as required to cook Khari Bhaat. Cook until two whistles blow.

Step 5

When the pressure cooker depressurizes, open the lid. Hot and spicy Kutchi Khari Bhaat is ready. Sprinkle some chopped coriander on the top.

Step 6

Serve warm Khari Bhaat with papad, dahi, and a glass of buttermilk – chaas.
