Boil the Pasta
Bring 4–5 cups of water to a rolling boil in a pot. Add 1 tsp salt and ½ tsp oil.
Add the Penne pasta and cook for 8–10 minutes until al dente (cooked through but slightly firm to the bite).
Drain the water and rinse the pasta with cold water to stop cooking. Set aside.
Sauté the Veggies
Heat 1 tbsp butter/oil in a pan over medium heat.
Add the minced garlic and saute for 30 seconds until fragrant.
Add the diced onions, capsicum, and sweet corn.
Saute on high flame for 2–3 minutes so they stay crunchy. Sprinkle a pinch of salt and pepper, then remove veggies from the pan and set aside.
Prepare the White Sauce
In the same pan, melt 2 tbsp butter over low heat.
Add 2 tbsp all-purpose flour (maida). Whisk continuously for about 1–2 minutes on low heat until the raw smell vanishes (do not let it turn brown).
Gradually pour in 2 cups of milk in a thin stream while whisking continuously to avoid any lump formation.
Cook on low-medium heat, stirring constantly, until the sauce thickens and coats the back of a spoon smoothly.
Stir in salt, black pepper, and cheese
Combine Everything
Add the sauteed vegetables and boiled penne pasta into the creamy white sauce.
Mix gently on low flame for 1–2 minutes until the pasta is evenly coated and well heated through.
Garnish & Serve
Transfer the pasta into a dish
Generously sprinkle red chili flakes, oregano, and a touch of finely chopped fresh coriander on top.
Serve piping hot!
