Tips and Tricks

  1. Use a pressure cooker to boil potatoes, peas, and other vegetables quickly. Avoid overcooking them, as excess moisture can make the cutlet mixture soft and difficult to shape.
  2. A mixer grinder helps prepare ginger, garlic, and green chilli paste in seconds. Pulse briefly instead of blending continuously to retain texture and prevent the mixture from becoming too watery.
  3. A vegetable chopper ensures finely and evenly chopped vegetables, helping the cutlets hold their shape better. Uniform pieces also make mixing easier and improve the overall texture.
  4. Use a grinder to make fresh breadcrumbs from leftover bread or to coarsely grind oats for a healthier coating. Freshly ground ingredients add better flavour and crunch to the cutlets.
  5. Preheat the air fryer before cooking and arrange the cutlets in a single layer without overcrowding. A light spray of oil helps achieve an evenly crisp, golden-brown exterior with minimal oil.
Step 1

Take a cooker and put all the vegetables like carrot, beans, beetroot, peas, and potatoes in it. Then, pressure cook them without adding water.

Step 2

If there’s any water in the vegetables, drain it out. Once done, mash all the cooked vegetables nicely.

Step 3

Now, put breadcrumbs, cornflour, green chillies, and ginger.

Step 4

Next, put all the spice powders such as red chilli powder, salt, garam masala, amchur powder, and cumin powder as per your taste, followed by coriander leaves.

Step 5

Mix them to make a stiff dough. If needed, add more bread crumbs to make the dough stiffer.

Step 6

Preheat the air fryer to 180°C for 3-5 minutes. Lightly brush or spray the prepared cutlets with oil and arrange them in a single layer in the air fryer basket.

Step 7

Air-fry at 180°C for 12–15 minutes, flipping halfway through and brushing with a little more oil if needed, until the cutlets are crisp and golden brown on both sides.
