Soak urad dal and moong dal for 5–6 hours and grind into a smooth fluffy batter adding little water
Mix salt and hing and whisk well to make it light, heat oil and drop small portions of batter to fry till golden,
Remove and soak the hot vadas in water for a few minutes then gently squeeze out excess water,
Whisk dahi with water, salt and a little roasted jeera powder till smooth, place the soaked vadas in dahi, top with meethi chutney, sprinkle roasted jeera powder and red chilli powder, add pudina and serve chilled.
