Step 1

In a mixing bowl, combine the mashed bananas, butter and jaggery powder.

Step 2

Whisk until smooth and well-incorporated.

Step 3

Sift the buckwheat flour, baking powder, and a pinch of rock salt.

Step 4

Gently fold the dry ingredients into the wet mixture. If the batter is too thick, add a tablespoon of milk or water to reach a pourable, cake-like consistency.

Step 5

Grease your muffin or heart-shaped molds with a little butter.

Step 6

Pour the batter into the greased heart-shaped molds filling them about 3/4 of the way.

Step 7

Top with cashews and raisins.

Step 8

Bake at 180°C (350°F) for 15–20 minutes in pre- heated oven till firm and golden.

Step 9

Once cooled slightly, sprinkle with a little desiccated coconut.
