Wash the potatoes thoroughly to remove any dirt. The potatoes should be cooked with the skin on. Now, make a slit in the center and lengthwise with a knife.
Now, take out all the ingredients and place them on a plate. Add a little oil and mix well.
Now, carefully fill the slits with the prepared masala.
Heat oil in a flat-bottomed pan or wok and add all the potatoes. Keep the heat low.
Cover with a plate or lid. Stir occasionally. After 10 minutes, reduce the heat to medium. Cook for 2-4 minutes, turning them over and simmering on all sides. Check with a fork or knife to see if they are cooked through.
Once they are cooked thoroughly all around, add coriander leaves and serve with roti, puri, or paratha.
