Step 1

Marinate mutton pieces in spices and yogurt for at least 30 minutes.

Step 2

Cook basmati rice until it’s 70% done. Sauté chopped onion, garlic, and ginger paste in ghee or oil until softened.

Step 3

Cook the marinated mutton until it’s tender. Layer cooked rice, mutton mixture, and spices in a pot.

Step 4

Dum cooking*: Cook the biryani on low heat (dum) until the rice is fully cooked.
