Make the Bisi Bele Bath Powder: Dry roast chana dal, urad dal, coriander seeds, cumin seeds, fenugreek seeds, cinnamon, and cloves over low heat until fragrant.
Add the dried red chilies and grated dry coconut; stir for 1 minute until lightly toasted. Let the mixture cool completely, then grind it into a fine powder.
In a pressurecooker add oil onion, add the mixed vegetables, saute, add rice, toor dal, turmeric powder, saute add grinded spice, salt Pour the extracted tamarind pulp and jaggery n water. Pressure cook till 3 whistles.
Heat ghee in a small pan. Add mustard seeds and let them splutter. Add cashews and sauté until golden brown.
Add asafoetida, dried red chili (optional), and fresh curry leaves. Pour this hot tempering over the Bisi Bele Bath.
Mix well and garnish with chopped fresh coriander leaves.
Serve piping hot topped with an extra dollop of ghee, alongside potato chips, khara boondi, or papad.
