The name of the dish may sound complicated but making it is easier than you think. It’s been a long time since quesadillas came into being and of course the dish has evolved over the years. People experiment with it all the time and now there are tons of variations you can find around the world. 

An authentic Mexican-style quesadilla is overloaded with cheese. The melted cheese that trickles down to every bite is what makes it super irresistible in taste.  If you love cheese, then stuff with loads of cheese.   1. Use a nonstick pan to make equally crisp tortillas without using too much oil. It also makes flipping simpler after the cheese has melted. 
  2. A flat tawa gives the quesadilla an even roast and beautiful golden spots. Preheat it well before placing the tortilla for a better texture. 
  3. If you’re preparing a large quantity, use an OTG to bake the quesadillas together. Brush the tortillas lightly with olive oil to get a crisp, golden finish. 
  4. When using an induction cooktop, set the heat to medium. High heat may cause the tortilla to brown too soon, before the cheese inside melts properly. 
  5. Use a sharp knife and a solid chopping board to finely dice vegetables. Smaller, uniformly cut pieces facilitate stuffing and keep contents from pouring out.

To prepare the tortilla, add refined flour, whole wheat flour, salt and oil to a bowl.

Mix everything well and knead a soft dough. Cover the dough and set it aside to rest for 20 minutes.

Meanwhile, prepare the stuffing. Add corn, processed cheese, all bell peppers, tomato, chilli flakes and Italian seasoning. Mix well.

Set aside till in use. Divide the prepared dough into equal portions. Shape each into a lemon-sized ball.

Roll these lemon-sized balls into a disc. Prepare all the tortillas this way. Cook one side of the quesadilla.

Spread grated cheese on half of the roll, place the prepared stuffing on top and fold over the other half.

Step 7

Heat oil on a non-stick tawa and roast the prepared quesadilla from both sides till brown spots appear and it becomes crisp.

Step 8

Prepare the remaining quesadillas the same way and serve hot with a choice of dip.
