Kadi rice is a classic North Indian comfort dish made with a tangy yogurt-based curry (kadi) cooked with gram flour (besan) and flavored with simple spices. Step 1

Whisk curd + besan + water until smooth (no lumps). Add turmeric + salt.

Step 2

Cook on medium flame, stirring continuously till it thickens (~15–20 min).

Step 3

Prepare tempering: heat oil, add mustard, cumin, chilies, curry leaves, hing.

Step 4

Pour tempering into kadhi. Add pakoras (optional) and simmer 5–10 min.
