Now, in a deep vessel, add semolina, corn, yogurt, salt, ginger, chili, and coriander. Mix well to make a smooth batter by adding a little water as needed (make sure the batter is not thin).

Heat oil in a pan. Add chana dal and urad dal and fry till pink. Add mustard seeds and fry them well. Add cashews, curry leaves, and asafoetida and fry them well on low flame. Add this tempering to the corn batter.

Now, add Eno and 1/4 cup water, mix well, and pour it into the idli molds. Steam it for 15-20 minutes. Check with a knife or toothpick. The delicious corn idlis are ready. Serve with chutney.
