Wash and dry the bhindi completely, then cut into small pieces. (Drying prevents stickiness)
Heat 1 tablespoon oil in a pan and lightly fry the bhindi until it becomes slightly crispy. Remove and keep aside.
In the same pan, add remaining oil. Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Cook for a minute.
Add chopped tomatoes and cook until soft and oil starts separating.
Add turmeric, red chili powder, coriander powder, and salt. Mix well.
Now add the fried bhindi and mix gently.
Cook for 5–7 minutes on low flame.
Sprinkle garam masala and serve with chapati, raita.
