They feature a savory spiced potato stuffing wrapped in layers of whole wheat dough.Instead of a large, flat disc, the dough is rolled into a tight coil—similar to a cinnamon roll—pinched onto a wooden stick, and shallow-fried until golden brown, creating a crispy exterior with a soft, flavorful center. This recipe transforms the traditional North Indian stuffed potato flatbread (Aloo Paratha) into a visually appealing “pop” or “lolly” shape by rolling the dough into a spiral (pinwheel) and cooking it until crispy.

Step 1

Prepare Dough: Mix flour, salt, and 1 tbsp. ghee. Gradually add water to knead into a soft, smooth dough. Cover and rest for 15-20 minutes.

Step 2

Prepare Filling: In a bowl, mix mashed potatoes with chilies, coriander, and all spices. Ensure the filling is smooth without large lumps to prevent breaking while rolling.

Step 3

Create Swirls: Divide the dough into small, equal balls. Roll one ball into a thin rectangle (or circle). Spread a thin layer of the potato mixture evenly over the surface.

Step 4

Roll and Slice: Roll the sheet tightly into a log. Cut into two from between. Take one part and roll into 1-inch thick pieces to create mini, circular pinwheels..

Step 5

Shaping the Pop: Take one slice, gently press it to flatten it and roll slightly. Insert a wooden stick into the side, pinching the dough around the stick to secure it.

Step 6

Cook: Heat a tawa or shallow pan with ghee/oil on medium heat. Place the pops on the pan. Shallow fry, turning occasionally, until both sides are golden brown and crisp.

Serve: Top with tomato sauce,grated paneer and Serve hot
