Popeye’s Magic Potion

Sauté the base Heat butter in a pan. Add bayleaf, garlic and onion; sauté until soft, not brown. Add chopped potatoes and cook for 1-2 minutes

Add spinach Add spinach leaves. Sauté only for 1 minute until just wilted (keeps the bright green color).

3. Cook with water Add 1 cup water. Cover and cook for 5–6 minutes until potatoes turn soft.

4. Blend it Let it cool a bit. Blend everything to a smooth purée.

5. Make it creamy Return to the pan. Add some more butter and maize flour and stir it continously to make smooth paste then add spinach puree, milk and water Add salt, a pinch of sugar, and pepper (optional). Simmer for 2 minutes (don’t boil hard).

Serve it like this (kids love it!) Add a swirl of cream or a little grated cheese. Serve with tiny garlic bread pieces or soft croutons. Use a fun name like “Popeye’s Green Soup”
