In a bowl, combine flour and semolina, salt, carom seeds, and oil.

Now add water and knead into a soft dough. Cover and let it rest for 10-15 minutes.

To prepare the masala, peel and grate the boiled potatoes. Grate ginger along with it. Heat oil in a pan. Temper it with cumin seeds, mustard seeds, and asafoetida.

Add red chili powder and turmeric powder, then mix with the grated potatoes and ginger. Add salt, coriander powder, mango powder, and garam masala powder.

Now form a dough ball and roll it out. Cut the sides and shape it into squares. Place it on a plate.

Now roll out another ball and roll it out. Cut the sides and shape it into squares. Spread the potato masala on top of it. Place the previously rolled roti on top.

Cut it lengthwise and widthwise.

Now, take one piece and join the two opposite edges. Then join the other two edges. A petal-like shape will be formed.

Make all the petals in this manner. Heat oil in a pan. Fry the petal samosas until golden brown.

All the petal samosas are fried and ready to serve.

Serve hot petal samosas with sauce.
