Step 1
Prepare the Chillies Wash the red chillies properly and dry them completely with a cloth. Slit them lengthwise carefully without separating them fully. Remove seeds if you want less spicy pickle.

Make the Masala In a bowl, mix mustard powder, fennel powder, fenugreek powder, turmeric, red chilli powder, kalonji, and salt. Add lemon juice and 2 tbsp mustard oil to make a moist stuffing mixture.
Step 3
Stuff the Chillies Fill the prepared masala inside each red chilli properly.
Step 4
Heat the Oil Heat remaining mustard oil until slightly smoky. Let it cool completely.
Step 5
Store the Pickle Place stuffed chillies in a clean glass jar and pour cooled mustard oil over them. Keep the jar in sunlight for 2–3 days and shake gently once daily.
