Vegetable Roll

Step 1

Finely chop Pointed Gourd and Potato.

Step 2

In moderately heated pan add oil, add onion seeds and allow to sizzle then add chopped veggies + green chilli and sauté for few minutes. Then add turmeric + salt and sauté for 3-4 minutes.

Step 3

Sprinkle 4 tbsp water, cover and cook for few more minutes. Veggies have turned soft and little mushy.

Step 4

Filling is ready, allow to cool and discard green chillies.

Step 5

Toast Roti with slight oil / ghee.

Step 6

Take roti / chapati, spread a layer of tomato sauce, then add 2-3 tbsp of filling and place it on any one side of roti.

Step 7

Now roll it gently and keep in lunch box. Follow the same process with rest of the rotis and vegetable filling.
