Saunf Jaggery Lassi

Cool, refreshing and naturally sweet — this traditional lassi with saunf (fennel) and jaggery is perfect for summer and a lovely drink for Mother’s Day. #MD26

Step 1

Dry roast the saunf for 1 minute on low flame until aromatic. Cool and crush lightly.

Step 2

In a blender add curd, jaggery, chilled water/milk, roasted saunf and cardamom powder.

Step 3

Blend until smooth and frothy.

Step 4

Add ice cubes and blend again for a few seconds.

Step 5

Pour into serving glasses.

Step 6

Garnish with chopped nuts, mint leaves or rose petals.

Step 7

Serve chilled.
