Step 1
Method for Sattu Stuffing: Take sattu in a bowl. Add chopped onion, coriander, green chilli, ajwain, cumin powder, red chilli powder, amchur, lemon juice and salt.

Mix everything well. Sprinkle a little water and make a moist, crumbly stuffing. Do not add too much water.
Step 3
Method for Paratha: Mix wheat flour and salt. Add water and make a soft dough. Cover and rest for 15 minutes.
Step 4
Take a small dough ball and roll it into a small puri.
Step 5
Place 2–3 tbsp sattu stuffing in the centre. Bring the edges together and seal properly.
Step 6
Roll gently into a medium-thick paratha.
Step 7
Heat a tawa and roast the paratha from both sides using oil or ghee until golden brown and crispy.
Step 8
Serve hot and crispy Sattu Stuffed Paratha with spicy Aloo Pyaz Chutney, curd andpickle.
Step 9
Tip: Add a little mustard oil and pickle masala to the sattu stuffing for an authentic North Indian flavour.
