#Modak is a favourite sweet dish prepared for the worship of Ganpati Bappa. It is usually made with rice flour, and the filling consists of jaggery, grated coconut, and cardamom powder. Here, instead of regular rice flour, I have used samak rice flour. The taste and texture turned out just like the ones made with regular rice flour.

Step 1

Bring water to a boil in a pan. Add a pinch of salt and a little ghee. Gradually add rice flour, stirring continuously to avoid lumps. Cover and cook on low heat for 2–3 minutes. Transfer the mixture to a plate and knead while it is still warm, adding a little warm water if required.

Step 2

Knead until you get a soft, smooth, and pliable dough. Place a small portion of the dough into the modak mould, add the filling, and shape the modak. Steam the modaks Place the modaks in a greased steamer plate, leaving some space between them. Steam for about 10–12 minutes on medium heat.

Step 3

Once the outer covering becomes slightly translucent and shiny, turn off the heat. Let them rest for a couple of minutes before serving. Garnish with chopped nuts.
