Step 1

In a bowl, mix curd, besan, water, turmeric, red chili powder, coriander powder, and salt. Whisk until smooth.

Step 2

Heat oil or ghee in a pan. Add cumin seeds, mustard seeds, and hing.

Step 3

Pour in the curd mixture and cook on low flame, stirring continuously.

Step 4

Let it simmer for 8–10 minutes until slightly thick.

Step 5

Break the papads into medium-sized pieces and add them to the gravy.

Step 6

Cook for 2–3 minutes more.

Step 7

Garnish with fresh coriander leaves and serve hot.

Step 8

Serve with Bajra Roti, Phulka, or Steamed Rice.
