Step 1

Wash all the dals, rice, makhana, and poha. Soak them for 6–7 hours.

Step 2

Add just enough water so that all ingredients are properly soaked.

Step 3

Grind everything into a smooth batter.

Step 4

Transfer to a bowl, whisk well for 2 minutes, and leave it to ferment for 12 hours.

Step 5

Once fermented, add salt, 1 tsp oil, and 1 tsp sugar. Grease a cake tin. Heat water in a steamer.

Step 6

Pour half of the batter into the tin and steam for 6 minutes.

Step 7

Remove the mold and mix 2 tbsp batter into the prepared chutney. Spread this chutney evenly as a layer.

Step 8

Steam again for 5 minutes.

Step 9

Now spread the remaining batter over the chutney layer.

Step 10

Steam for 10–15 minutes.

Step 11

Let it cool, then demould and cut into desired shapes.

Step 12

Prepare a tempering with 1 tsp oil, mustard seeds, curry leaves, green chilies, and white sesame seeds. Pour over and serve.
