Pressure Cooker Vegetable Matar Pulao

Step 1

Wash and soak the basmati rice for about 15–20 minutes, then drain.

Step 2

Heat oil or ghee in a pressure cooker. Add cumin seeds and whole spices.

Step 3

Add sliced onions and sauté until lightly golden.

Step 4

Add green chilies and ginger-garlic paste. Sauté for a minute.

Step 5

Add the chopped vegetables and green peas. Cook for 2–3 minutes.

Step 6

Add turmeric, garam masala, and salt. Mix well.

Step 7

Add the drained rice and gently sauté for 1–2 minutes.

Step 8

Pour in 3 cups of water and mix gently.

Step 9

Close the pressure cooker and cook for 1 whistle on medium heat. Turn off the heat and allow the pressure to release naturally.

Step 10

Open the cooker and gently fluff the pulao with a fork. Garnish with fresh coriander and serve hot.
